This summer Santropol Roulant celebrated it’s 20th. year anniversary and they had a big neighbourhood party where I had the opportunity to participate with the Centrale Culinaire’s winning team for the Iron Chef Competition.
We made a gluten free vegan bouchée that consisted of a beet cracker, pea hummus, vegetable ceviche and crispy tortilla topping.
